WINEMAKER'S NOTES
We use a French varietal grape grown here and originally sourced from the Bordeaux region in France.
The Sauvignon Blanc process is similar to that of the Johra during its early stages, except for the ripening of fruit and the ageing process.
The name is derived from the French names "Sauvage" (meaning "wild") and "Blanc" (meaning "white").
After the grapes have been pressed the juice is moved into temporary tanks for the primary fermentation process to begin. It is then when the "veil" begins to form after a couple of weeks. After a couple of months the wine is then moved to French oak barrels to mature for another several months. This is where our Sauvignon Blanc develops its distinct classic notes.
